Pancakes come in all shapes, sizes, and flavors! Around the world, people enjoy everything from thin French crêpes and Indian dosas to savory Japanese okonomiyaki.

Tradition Trail: Pancake Tuesday

Shrove Tuesday is often called Pancake Day or Pancake Tuesday. Traditionally, making pancakes was a delicious way to use ingredients such as eggs, butter, and milk before the beginning of Lent. In Olney, England, the celebration even includes an annual Pancake Race, with participants racing through town while carrying frying pans and flipping pancakes!

Science Trail: The Perfect Pancake

What makes a pancake light and fluffy? Leavening agents (like baking powder) create tiny bubbles of carbon dioxide in the batter, helping it rise as it cooks.
