National Taco Day celebrates one of the most versatile—and most delicious—foods around. A taco can begin with a soft corn tortilla, a flour tortilla, or a crunchy shell and be filled with an almost endless variety of meats, vegetables, cheeses, sauces, and regional specialties.

💡 Did You Know?

The word "taco" comes from 18th-century Mexican silver mines, where it originally described small paper charges of gunpowder used to blast rock.

This Is a Taco!

Taco is a squirrel who would much rather talk about his favorite food than follow the story someone else has planned for him. Before long, he takes control of the narrative and begins rewriting the book himself.

This funny, unexpected story is a wonderful reminder that writers do not have to accept the first version of a story—or let someone else decide what happens next. As you read, notice how Taco uses his personality, opinions, and voice to change the direction of the book.

Choose the taco topping you believe deserves to be crowned the greatest topping of all time and write a persuasive argument convincing your readers why it’s clearly the best choice.Is it melty cheese, crisp lettuce, spicy salsa, creamy guacamole... or something completely unexpected?

Begin with a strong opinion: Every truly terrific taco needs…

Think about flavor, texture, color, smell, and even the sound of the first bite. Does your topping add a satisfying crunch, cool down a spicy filling, hold everything together, or provide a surprising burst of flavor?

You might also admit that another topping is good before explaining why yours is still better:

Salsa may add plenty of flavor, but no taco is complete without the creamy goodness of guacamole!

Build-Your-Own Taco Taste-Off

Set out several taco fillings and toppings, then invite everyone to create a one-of-a-kind taco combination.

Before eating, each taco creator should:

  1. Give the taco an attention-grabbing menu name.
  2. Describe the combination in one tempting sentence.
  3. Explain which topping is the star of the taco.
  4. Present the taco to the family taste-test panel.

Find Mexico on a map, then explore how taco fillings and traditions differ from one region to another. Coastal communities, farming regions, large cities, and border areas have each developed distinctive foods using local ingredients.

Wonder Challenge: Look up Baja fish tacos, Yucatán cochinita pibil tacos, and barbacoa tacos from central Mexico. Which would you most like to taste?

History Trail: The Mexican Food Revolution

Tacos traveled into the United States through Mexican and Mexican American communities. Over time, traditional recipes mixed with regional ingredients and new cooking ideas, contributing to Tex-Mex, Cal-Mex, fast-food tacos, food-truck creations, and many other variations.

Wonder Challenge: Tacos changed as Mexican families brought their recipes to new parts of the United States. Look up the difference between a traditional Mexican taco and a Tex-Mex taco. What stayed the same, and what changed?

Science Trail: Ancient Tortilla Chemistry

Traditional corn tortillas begin with nixtamalization, an ancient process in which dried corn is cooked and soaked in an alkaline solution before being ground into masa. This changes the corn’s texture, flavor, and nutritional properties.

Wonder Challenge: Look up what corn looks like before and after nixtamalization. What changes do you notice in its color, texture, or shape?
